Niagara Cabernet Sauvignon shows strongly in warmer vintages such as 2007, and this wine from that favourable vintage has gone on to develop and evolve through its years in bottle. The nose expresses both the exceptional vintage and the wine’s gradual evolution, with black olives, classic cassis, black cherry, pencil box, and fresh green cedar, although there is certainly no under-ripeness present here. The broad fruit spectrum couple with tertiary aromatics leads to a plush rush of fruit on the palate with seamless oak integration (this wine seeing just over 20 months ageing in 100% new French oak). With the impressive structure and definition that fine cool climate Cabernet fruit brings, this wine is still very much in its youth and will certainly improve with more time in bottle. Will certainly benefit from a decant one hour before serving.

Growing Conditions

2007 will be recorded by most as excellent though it is important to remember that not all grape varieties benefit from a hot, long, growing season. Bud-break was frost-free and flowering occurred under ideal calm. The summer and fall were seasonably warm and dry allowing for clean fruit and above average ripeness levels.
