Following the achievements of our first 'skin fermented white' from 2019, the Harvest Team in 2020 adopted a like-minded approach by fermenting the Viognier grapes on their skins for 29 days. The result is a distinct tannic structure, slight oxidation and in particular, a bright orange hue.

However, one of the notable differences from this bottling is it's time spent in Italian Clay Amphora; a traditionally made oval-shaped vessel with a tapered base. This method is not a new practice: in fact, it’s one of the oldest techniques used in winemaking, dating back to more than 5,000 years ago!

Clay is a material that can be seen as the meeting point between steel and oak. Like stainless steel, it does not impart any flavours into the wine and acts as a protective barrier from oxygen. However, the porous nature of the material allows for a slow controlled amount of oxygen to impart deep and rich textures and, in this case, does so without the flavours and tannins typically found in an oak barrel.

Trials Vol 2.1 Skin Contact Viognier is wonderful, refreshing, and layered with aromas of orange blossom, grapefruit and lychee followed by a remarkable palate of lemon thyme, chamomile tea and white pepper.
