What is Ancestral?
The oldest sparkling method in the world, predating the methode traditionelle, a naturally paused fermentation from cold winter temperatures, restarts in spring to complete the 'bubbly' effect. Non-disgorged, the sediment remains in bottle and contributes texture and an intriguing haze.
