Vibrant deep purple in the glass, the 2012 Cabernet Sauvignon has a layered bouquet of ripe blackberries and dark chocolate, with some sweet tobacco and spicy sandalwood notes. The wine expresses a structured and powerful palate of fleshy black fruit, coupled with ripe and fine-grained tannins, leading to a sustained dark-fruit-influenced finish.

"The Stratus 2012 once again belies the perception, still held by some, that big reds can't be made in Niagara's cool climate. The Niagara-on-the-Lake sub appellation, on the border of the Four Mile Creek, the region's warmest, is the origin of this bold and muscular cabernet, dense, very ripe yet still sinewy and firm, anything but jammy and soft, certainly not green. Tannins are abundant and chewy, but balanced by masses of dark fruit, ensuring that textural harmony will eventually be reached, likely in another 2-3 years or so, the minimum needed to soften these edges. Growing Conditions

The winter of 2012 was warmer and drier than in previous years with vine development starting very early in the season. An extremely warm March was followed by significantly cooler temperatures and frost in April. While devastating for many of our neighboring tender fruit growers, our vineyard buds had not yet "woken" to spring when the frosts hit and the crop thankfully did not suffer. Bud break did occur about 16 days earlier than usual which extended the length of the growing season. Summer temperatures continued to be above average with July being much drier than normal. Overall, the hot, dry climate resulted in the best growing season for Stratus to date and provided flawless fruit for an impressive lineup of wines.
